At our Portsmouth NH bed and breakfast, this easy crustless spinach quiche is one of the most dog-eared recipes in our files. We love it because everything can be assembled the night before, placed in the quiche pan and refrigerated. In the morning, pre-heat the oven and 45 minutes later you have yummy quiche cooling on the counter top waiting for hungry family and/or friends. For the same reason, this dish makes a perfect mid-week dinner for a few close friends. Pour some wine, enjoy conversation over cheese and crackers and relax while the oven takes care of your main course. Add a green salad and baguette from a local bakery and dinner is ready.
